ABSTRACT :

ExoSeeds Chips is an innovation in creating crackers from rambutan seeds providing a unique approach to utilizing agricultural waste, providing a sustainable and health-conscious alternative to conventional snacks. Rambutan, a tropical fruit that is abundant in Southeast Asia. However, this innovation has shown the potential of this agricultural waste as a nutritious ingredient for the production of crackers. Rambutan seeds are rich in protein, fiber and minerals, which make them an excellent source of nutrients for developing healthier snack options. When properly processed, these seeds can be boiled, ground into flour, and incorporated into dough, resulting in crackers with a crunchy texture and unique flavor. Flour from rambutan seeds can also be mixed with other plant-based flours, such as rice or corn, to balance the flavor and improve the texture.
