NutriSoul Retorted Rice Porridge is an innovative functional food developed to meet the growing demand for convenient, nutritious, and comfort-enhancing meals. This ready-to-eat rice porridge is enriched with traditional wellness ingredients such as ginseng powder, goji berry, corn, and spring onion, which are known for their antioxidant, immune-boosting, and digestive benefits. The formulation is inspired by the fusion of modern convenience and traditional Asian medicinal values, making it suitable for health-conscious consumers across all age groups. NutriSoul Rice Porridge is offered in three protein variations: (i) chicken strips, (ii) button and shiitake mushrooms, and (iii) crab stick and prawn seafood blend. Each variation provides a unique nutritional profile and sensory experience, catering to diverse dietary preferences including meat, vegetarian, and pescatarian consumers. Consumer sensory evaluation using 9-point Hedonic scale involving thirty panelists revealed the seafood (crab stick and prawn) variation as the most preferred with an overall acceptability of 7.85 ± 1.82, which can be attributed to its rich umami flavour, appealing aroma, and satisfying texture. Packaged in a shelf-stable retort pouch, NutriSoul Rice Porridge ensures extended shelf life without compromising nutritional value or taste, making it ideal for busy individuals, elderly consumers, and those seeking restorative meals. NutriSoul Rice Porridge represents a novel approach to functional ready-to-eat meals by combining culinary tradition, scientific nutrition, and food technology in a single, comforting bowl.
