Jackfruit seeds are often discarded as waste despite their rich nutritional value. These seeds are packed with protein, fiber, vitamins, and antioxidants that support digestive health, boost immunity, and promote overall well-being. However, due to a lack of awareness and complex processing methods, jackfruit seeds remain an underutilized resource in the food industry. The objective of this project is to develop a healthy and innovative snack, Jackfruit Seed Chips, to commercialize jackfruit seeds on a larger scale while reducing food waste. Our product transforms these nutrient-dense seeds into crispy, flavourful chips using a careful process of cleaning, boiling, peeling, slicing, seasoning, and drying. The chips provide a healthier alternative to conventional snacks, offering a good source of plant-based protein and essential minerals. Packaged in convenient, eco-friendly sachets, Jackfruit Seed Chips cater to health-conscious consumers, fitness enthusiasts, and individuals seeking sustainable snack options.

A survey was conducted using Google Forms to assess market potential, gathering responses from 150 participants. Findings reveal that 14.6% of Malaysians are unaware of the health benefits of jackfruit seeds, while 67.8% agree that jackfruit seeds should be innovated into a commercial snack product. Additionally, the increasing demand for healthy and sustainable snack options post-pandemic further supports the marketability of this product. By introducing Jackfruit Seed Chips, this project aims to offer a nutritious, eco-friendly snack while contributing to waste reduction and sustainability efforts.
